Recipes for the summer: Quinoa and cod burger

Ricette per la bella stagione: Burger di Quinoa e merluzzo

Ingredients for 4 people)
» 350 g of cleaned cod fillets
» 100 g of quinoa
» 1 bunch of chopped fresh parsley
» 1 tablespoon of grated Parmesan
» fine salt, extra virgin olive oil, 1 egg white

Rinse the quinoa under cold water. Put it in a saucepan and pour water or vegetable broth (one glass of quinoa for two of water/broth).

Cook for 10 minutes, or until the quinoa has absorbed all the liquid. Let cool.

Meanwhile, cut the cod into small pieces, pour them into a boule and add salt, Parmesan and parsley.

Add the quinoa, mix with a fork, add the egg white and continue mixing with your hands.

Preheat the oven to 180°C and cover a pan with baking paper brushed with oil.

Form the burgers, bake them for 20 minutes and serve with a fresh seasonal salad.
